Fall Recipes: Roast Chicken & Halloween Cheesecake Tartlets

Fall Recipes: Apple Chicken Tacos & Apple Cider Caramels

I am a huge fan of Mexican food. Its my absolute favorite. When I see a twist on a classic Mexican dish, I am immediately excited! These Apple and Chicken Tacos from Cooking & Beer are just that. They are so creative and they make my mouth water!

We have saved the best recipes for last! Today, we have Chicken with Apple & Cranberry from Isn't Everything in the Kitchen Trial and Error? This delicious chicken dish is beautiful and uses the flavors of the season in a creative way. I can't wait to try this one out!

Fridays Just Got a Little Sweeter!

As I shared with you in my last post, I am pregnant and it’s no surprise that I have been really into baking lately!  I wanted to share with you all some really delicious looking recipes that I have been dying to try!
I love chocolate so I had to throw in some chocolate and peanut butter bars that I found over at BakerLady. I have made these before and they are just scrumptious!! I think it has been over a year since I made them and my mother in law is still asking for the recipe! (I know I should have given it to her by now but I keep forgetting!)

These delicious looking cookies are my project for this weekend. They are Neapolitan flavored spritz cookies from I Am Baker! There is vanilla, chocolate, and strawberry but I think I’m going to skip the strawberry ones seeing as how I love chocolate so much! The inside of these cookies is marshmallow butter-cream filling. I bought the marshmallow crème for these and my husband has been slowly eating it out of the jar! I better make these quick before I lose one of my ingredients!

I also really love to have salted chocolate. Not everyone is a fan of this but I can’t resist the salty and sweet mixture. It is perfect for my taste! I decided to make these salted caramel brownies from DougnMesstic. I think this might be my project for next weekend if I’m feeling really ambitious! Just look at that luscious, melted river of caramel. Mmm Mmm Mmm!

My Delicious Homemade No-Bake Cookies! {Recipe}

Every once in a while, I get a craving for some chocolate! {Who doesn't?!} I'm a little picky though..I don't like just any chocolate...nope - I like delicious, melt in your mouth, peanut butter-chocolatey goodness!! And it needs to be easy to get. That is when I reach for my favorite cookie recipe!


Yum, right? I know :) Well I'll get to the good part - the recipe! Here it is:

INGREDIENTS:

Boiling Pot:
  1. 1/2 C Milk
  2. 1 Stick of Butter
  3. 2 C Sugar
  4. 1 tsp. Salt
Mixing Bowl:
  1. 3 C Old Fashioned Oats (you dont want to get the quick oats because you dont want them to get soft)
  2. 6 Tbsp Hershey's Cocoa
  3. 1 tsp Vanilla Extract
  4. 1/2 C Peanut Butter
DIRECTIONS:
  1.  Put the milk and butter together in a large pot on the stove. Heat until the butter is melted.
  2. Add the Sugar and Salt and bring to a boil.
  3. Let the ingredients boil for 1 minute. Remove from heat.
  4. Add the oats, cocoa, vanilla and peanut butter. 
  5. Stir ingredients together and scoop onto cookie sheet. Let cool and enjoy!
These are perfect for when you remember that you need to bring a dish to that Christmas party that you are leaving for in 30 minutes! Its quick and easy to make - it only takes about 10 minutes!

Made By Me Mondays #16! {Nutella Muffins}

Ok so I work for a catering company and as a result, I get to try a TON of yummy food! The other day, our chef brought me a Nutella muffin and I fell in love! I decided to try and make it at home.

Let me try and make your mouth water here - This muffin was a soft, moist, vanilla flavored muffin with pockets of Nutella throughout. To top it all off, the top had a drizzle of (you guessed it!) even more Nutella. YUM right?

I had to have more.


I went to the store and bought:
1) Nutella (of course!)
2) Krusteaz almond poppyseed muffin mix (it was the closest to vanilla that I could find)

Step 1:

Mix all the ingredients together that it says to on the box but DON'T mix in the poppyseeds.

Step 2:

Spoon the mix into your muffin pan after you put the papers in it.

Step 3:

Put a dollop of Nutella on the top of each muffin (try melting it in the microwave a little bit first so that it spreads more evenly on the top of the muffin). Push it down into the muffin mix a little bit with a toothpick so that it makes a "swirl" of Nutella in the top half of the muffin.


Step 4:

Bake it like the box says.

Step 5:

Once they come out of the oven, have more slightly melted Nutella ready for them (See step 3). Drizzle the slightly melted Nutella on the top.

Step 6:

Let cool, grab a glass of milk, and enjoy!

As a variation on this recipe, you can put the dollop of Nutella in the middle of your muffin and just add the drizzle on top. That would be super yummy!

I know that lots of you will be having family over for the holidays. I have been to family parties that are fancy and family parties that are laid back and comfortable and there is one thing that everyone looks forward to at these parties - the food - particularly the desserts!

If you are lucky enough to live in the Kirland/Seattle area, they might even deliver! They have free delivery to Kirkland, Redmond, and Woodinville and if you live outside that area, there is a tiny delivery fee which is almost nothing considering that their prices are great to begin with!
